Tomato & Spinach Penne Pasta

May 8, 2020 By Kara Leave a Comment

There’s nothing as satisfying as delicious, creamy pasta. Especially when you can cook the whole party in just one pot. Easy prep, easy clean-up, easy to love. The starch from the pasta and the nondairy milk make the sauce creamy, so no need to add oil, fat, or nuts that have been soaked for hours. It […]

Creamy Broccoli Dal

April 28, 2020 By Kara Leave a Comment

This was one of the first vegan soups I made, some 10-odd years ago. It’s from Lauren Ulm’s Vegan Yum Yum, and the only change I’ve made is omitting the oil. It tastes even better the next day. Delicious spooned over a baked potato or a steaming bowl of rice.

One-Bowl Blueberry Muffins

April 15, 2020 By Kara 1 Comment

Can you tell I don’t like washing dishes? The fewer the better, without compromising taste of course. Plump, purple blueberries burst inside of these little guys, lending a tangy sweetness. Ripe, mashed banana and nondairy yogurt or applesauce are easy substitutes for oil. Sprinkle brown sugar and cinnamon on top before baking for a sweet, […]

Tres Hermanas Stew (Three Sisters Stew)

July 7, 2016 By Kara Leave a Comment

No, I’m not crazy.

Yes, we are in the middle of 90+ degree July heat and yes, I’m making a knock-your-socks-off, chunky stew. It’s hot. And spicy. It is the antithesis of summer-friendly food. Why, you ask? We have a sick kid at home. And we have to get her better before her big performance (in Fame) at drama summer camp. But more importantly, we have to get her better so she’s better and not sick. So that means a no-nonsense, super-nutritious pot of Tres Hermanas Stew. One that has loads of antioxidants to fight this big bad daddy of an illness. Continue Reading…

Here Comes the Sun Breakfast Quinoa

May 25, 2016 By Kara Leave a Comment

The clouds finally cleared and the sun came back. After so many rainy, dreary days, it seems like we finally have our spring. Walking this morning in the sunshine felt so darn good. I’m vitamin D-ized again. Of course I’ll be cursing the unrelenting DC heat and glare come July, but for now I’ll take the sun and all its glory with wild abandon! A super-flavorful, high-protein breakfast is perfect for this morning. Move aside ‘oatmeal’. The winter is O-V-E-R. I’ll have some quinoa cooked in almond milk, with chewy raisins, sweet apricots, and subtle flavors of vanilla and cinnamon. Topped with toasted almonds to add some crunch. Delicious. Nom, nom, nom… Continue Reading…

Garlic Braised Kale

March 18, 2016 By Kara Leave a Comment

This kale recipe is always a hit in my Kickstart Your Health classes. It’s just so darn good. Savory. Chewy. Garlicky. Salty. And it takes very little time to prepare. It’s E-A-S-Y and almost mistake-proof. Continue Reading…

Hungry-man Scrambled Tofu

February 20, 2016 By Kara Leave a Comment

Hungry-man Scrambled Tofu is my take on scrambled tofu. It’s a breakfast-brunch favorite at our house, and you won’t miss the eggs at all. I make it at least once a week for hubby and me — it’s a hungry-man meal and will not disappoint! Continue Reading…

Miso Soup with Shiitake Mushrooms

January 13, 2016 By Kara Leave a Comment

Baby, it’s cold outside! Winter is here. It’s about time, huh? As I was driving home last night, the snow was blowing into my windshield sideways. Weeeeeeee — what fun! It was like flying in the Millennium Falcon with Han and Chewie a gazillion miles an hour past all those stars. Now it’s time to warm up with some tasty, mm-mmm-good soup. Here’s one of family’s favorites. Hubby likes the miso, the kids love the noodles, and I like to add extra ginger and jalapenos to mine for more pizzazz. Continue Reading…
