The clouds finally cleared and the sun came back. After so many rainy, dreary days, it seems like we finally have our spring. Walking this morning in the sunshine felt so darn good. I’m vitamin D-ized again. Of course I’ll be cursing the unrelenting DC heat and glare come July, but for now I’ll take the sun and all its glory with wild abandon! A super-flavorful, high-protein breakfast is perfect for this morning. Move aside ‘oatmeal’. The winter is O-V-E-R. I’ll have some quinoa cooked in almond milk, with chewy raisins, sweet apricots, and subtle flavors of vanilla and cinnamon. Topped with toasted almonds to add some crunch. Delicious.
